Steamed Seafood Medley with French Bistro Salad

Inspired by my obsession with France, and love for simple preparation that lets the quality and taste of the food itself shine.

Ingredients

1) 1 bag seafood medley (I get mine frozen from the grocery store, like Giant, Harris Teeter, and Trader Joe's. Trader Joe’s is a 16oz bag).

2) 1 head Boston lettuce

3) 1 head Escarole

4) Croutons (optional)

5) Your favorite dijon dressing (here’s mine Skinnygirl) or you can make your own.

6) Salt and pepper (preferably fresh ground) to taste

7) 4-6 thin slices of lemon (to taste)

8) 3 sprigs of fresh parsley (more for garnish)

Directions

1) If your seafood medley is frozen, be sure you have safely defrosted it prior to cooking.

2) Put enough water in the pot to bring to a boil but not enough to touch the steamer basket. Bring it to a boil.

3) Place the steamer basket in the pot, and add the medley. Season with salt and pepper, parsley, and lemon. Cover and reduce heat to maintain a gentle boil.

4) Steam for 4-6 minutes depending on the size and amount of your seafood,

5) While that’s steaming, wash the greens and chop off the ends.

6) Tear greens into bite-sized pieces.

7) Add greens to a serving boil and toss. I always serve dressing on the side but you can dress the salad if preferred.

8) Remove the seafood from the pot and place onto the serving platter.

9) Add additional salt and pepper to taste, garnish with parsley if desired.

10) Eat & be happy.

Options:

1) You can use green and/or read leaf lettuce too.

2) You can also use simple extra virgin olive oil, salt, and pepper for the greens.

3) You can boil, bake, pan fry, or use the air fryer for your seafood medley,
