Easy, Healthy Salty-Sweet Snack: Oat and Seed Protein Bites

I love oats and seeds combined but hate all the high-sugar binders like honey. So, when I realized collagen was sticky, I thought it might work as a binder in bars and granola. I was right! Here’s one of my favorite recipes using collagen (and my friends and family think so too!). It’s not too salty, not too sweet, and takes the edge off so you don’t get hangry!

Ingredients

1) 1/2 cup oats (not the instant)

2) 1 scoop collagen peptides (I use type this when baking)

3) 1/4 teaspoon monk fruit or stevia

4) 2 tablespoons roasted & salted sunflower seeds

5) 2-3 teaspoons water

Directions

1) Combine the dry ingredients in a bowl and mix thoroughly.

2) Add the water a little at the time and stir (works easier to mix with your hands). You want the mixture to be a little wet but no standing liquid. If you add too much water, simply dash in a bit more collagen or oats. (or both). Seriously, less is more here.

3) Drop portions of the mixture into the cups of a silicon baking tray. And press down so the mixture packs to itself. I use the tray for my air fryer. You can also do this in bar form or ball form.

4) Freeze for at least an hour.

5) Eat & be happy. Store in freezer. No need to heat or soften before eating.

Options:

1) You can mix in dried fruit like cranberries and raisins.

2) You can add flavors like cinnamon and vanilla.
