Quick & Healthy: Air Fryer Chicken and Sautéed Mushrooms and Onions

If you’re a fan of Steak Diane, and trying to eat a little healthier, you’ll dig this spin.

Especially if you keep the broth and create a sauce. See options below.

One of the biggest myths about healthy eating is that the food tastes like cardboard. This quick and easy dinner recipe will prove it.

1) Top a boneless, skinless chicken breast with Spice House’s Maple Mesquite Seasoning (I LOVE their mixes, so stay tuned for more suggestions.)

2) Pop the chicken breast in the air fryer on 350 until cooked.

3) Slice one vidalia onion.

4) Spray a pan with cooking spray and dump the onion slices in the pan on high heat until they start to brown, Toss them around frequently.

5) Dump a container (or preferred amount) of pre-sliced baby portabella mushrooms in the pan with the onions. Add salt and pepper to taste. Cook for 5-7 minutes,

6) When all is done, plate your chicken breast and top with the onion/mushroom saute. If you want to add a sauce, you can thicken the broth from the mushrooms with arrowroot to thicken it to your preferred sauce texture.

7) Eat & be happy.

Options:

1) You can use any protein, I prefer lean cuts.

2) You can season the chicken with salt and pepper only.
