Need a Healthy Side Dish for Warmer Days? Try This Tangy Hearts of Palm Salad
This side salad is ridiculously easy to make.
Ingredients
1) 2 14-ounce jars of hearts of palm, drained
2) 3-4 stalks celery, thinly sliced (mine were long stalks)
3) 8-10 radishes, thinly sliced
4) 8-10 cherry tomatoes, halved
5) 1 tablespoon dijon mustard
6) 1 tablespoon lemon juice
7) 2 tablespoons white vinegar (you can make one tablespoon white wine vinegar for extra kick)
8) 1/4 teaspoon extra virgin olive oil
9) dried parsley for garnish
Directions
1) Combine the veggies in a serving bowl or storage container.
2) In a separate bowl, mix the dijon mustard, vinegar, lemon juice, and olive oil.
3) Add a little dressing a time to the veggies, mixing delicately so as not to break the hearts of palm. Store any remaining dressing in fridge
4) Garnish with parsley
5) Eat & be happy.
Options:
1) You can use fresh parsley or no parsely
2) You can use any color cherry tomatoes. I added yellow and orange so it wouldn’t look like Christmas in April ;).
3) If you’re making it for others, you might leave it undressed and let them add the amount of dressing they prefer. It is tangy, not everyone likes a lot of tang. It will still look pretty (see first picture below).
